I think this is the busiest month I have had all year! There is something going on every weekend and then We go to VEGAS soon also!!! I LOVE Vegas, we always have so much fun!
Since yesterday's high temperature was in the 50's I made one of my favorite meals for dinner. It's super easy and so, so tasty.
Oven fried chicken with saffron rice and green beans. Sometimes the simplest things are the best.
First, pre heat the oven to 375, then place the chicken in the cast-iron skillet skin side down to season the bottom, then flip each piece over and season the skin side. |
These are my favorite seasonings for Oven fried chicken |
bake for an hour to an hour and 5 minutes |
The chicken cooks in its own juices, no oil at all needed! HEALTHY! |
Green beans seasoned with garlic, salt & pepper and some butter |
Saffron Rice. Enough said, it's DEEEE-lish! |

So now I have got to get the laundry done and the house vacuumed & dusted because I've got company a-coming and no other time to do all of it. Hope y'all have a wonderful week and I should have a lot of pictures to post this month!
